Naturally Sweet, Grain-Free, Delicious!

If you’re following a paleo eating plan—or just trying to eat cleaner and cut out processed foods—you know that breakfast can sometimes feel a little limiting. No grains, no dairy, no refined sugars… what’s left? Yes, there’s always eggs, but sometimes we want to just pull something healthy out of the fridge and get on with our morning.

Happily, when you have a jar of this crunchy, naturally sweet paleo granola in your fridge, a delicious, nutritious, and filling breakfast is just moments away.

This grain-free granola swaps traditional oats for a nutrient dense mix of nuts, and coconut flakes, all lightly coated in a blend of coconut oil, vanilla, and a touch of maple syrup (depending on how strict you are with your paleo guidelines). The result? A golden, toasty, and incredibly satisfying granola that hits all the right notes—sweet, salty, crunchy, and just a little bit indulgent.

What I love most about this paleo granola is its versatility. It’s perfect sprinkled over yogurt or chia pudding, eaten by the handful as a snack, or served with your favorite milk as a quick, nourishing breakfast. It’s also endlessly customizable—swap in your favorite nuts or add a pinch of ginger or nutmeg for a twist.

Unlike many store-bought granolas, which are often loaded with added sugars, vegetable oils, and fillers, this homemade version is clean, nutrient-dense, and made with real, whole ingredients. Whether you’re deep into paleo living or simply looking for a healthy and delicious snack, this recipe provides a wholesome staple for your morning.

Description

An energizing mix of nuts, dates, and coconut, all lightly coated in a blend of coconut oil, vanilla, and a touch of maple syrup and orange juice. This homemade paleo granola is nutrient dense and extra filling – it will keep you full until lunch!

Ingredients

Units Scale
  • 2/3 cup of pitted dates, finely chopped (1/4 inch pieces)
  • 1 medium orange (for zest and orange juice)
  • 1/4 cup water
  • 1 cup raw unsalted almonds, finely chopped (1/4 inch pieces)
  • 1 cup of raw walnuts, chopped
  • 1/3 cup unsweetened shredded coconut
  • 1/4 cup almond flour
  • 1/4 cup coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt

Instructions

Preheat the Oven

  • Preheat the oven to 350° F (175 °C).

Poach the Dates

  • Place the chopped dates in a small pan on the stove.
  • Zest the orange, to create approximately 1 teaspoon of zest. Add the orange zest to the dates in the pan.
  • Cut the orange in half horizontally and squeeze out as much juice as you can into a measuring cup. You will likely get about 1/4 of juice.
  • Top up the orange juice with water, until you have 1/2 cup of liquid. (This will require around 1/4 cup of water.)
  • Add the liquid to the dates and orange zest in the pan.
  • Poach the dates on medium-low heat for approximately five minutes. The dates will absorb the liquid. As the liquid is absorbed, stir and turn the heat to low to prevent burning. (Sugar scorches easily.) When you have a lumpy date paste with little liquid left free in the pan, you are done poaching the dates.

Mix Ingredients

  • In a large bowl, add the poached dates and the remainder of the ingredients.
  • Mix well.

Bake

  • Place parchment paper onto a 9×13 inch glass baking dish.
  • Spread the mixture on the bottom of the dish and press firmly until it forms an even layer.
  • Bake for 12-15 minutes. Each oven is different, so check at the ten minute mark. Bake until nicely browned.
  • Let the granola cool in the pan. This will help the granola stick together so that you get nice clusters.

Enjoy & Store

  • Enjoy your granola with your favorite fruit, yogurt, and/or milk.
  • Store left over granola is an airtight container in the fridge for up to 5 days.
