Description

Start your day with berries, yogurt, and chia seeds. It’s is a delicious and healthy breakfast to enjoy all year long, with fresh or frozen berries, and a sprinkling of superfoods. Frozen berries are blended with yogurt and chia seeds and refrigerated until thickened into a pudding. Top with banana, granola, and nut butter for a no-fuss breakfast.


Ingredients

  • 1 cup mixed berries (fresh or frozen, frozen berries are best defrosted)
  • 3 tbsp chia seeds
  • 3 tbsp grated beetroot
  • 1 cup unsweetened Greek yogurt
  • 1 tbsp maple syrup (or honey)
  • 1/4 tsp turmeric
  • 1/2 tsp maca powder
  • 1 tsp black sesame seeds

Instructions

Blend the Base

  • Combine berries, chia seeds, beetroot, yogurt, maple syrup, turmeric, and maca in a bowl. 
  • Blend ingredients with a stick blender. (Alternatively,  ingredients can be blended in a conventional blender). Blend under smooth, or leave some texture – it’s up to you.

Chill

  • Refrigerate for at least 20 minutes, or overnight, until the mixture thickens into a pudding-like consistency.

Add Toppings and Enjoy

  • Give the blended mixture a stir, scoop it into a bowl, and top with sesame seeds. You can also add banana slices, granola, nuts, or a spoonful of your favorite nut butter. Enjoy immediately.
