Here is a vibrant, nutrient-dense breakfast that’s as beautiful as it is good for you. Whether you’re running out the door for a morning run or easing into a slow weekend, this yogurt bowl will fuel your morning. It’s naturally sweet, full of fiber and healthy fats, and rich in probiotics. It’s adaptable to whatever season you’re in—use fresh berries in summer or thawed frozen ones in winter.

  • Your favorite low sugar granola,
  • Roasted nuts and seeds, and/or,
  • A dollop of nut butter (almond, peanut, or sunflower seed).

Notes

  • Defrosting berries: If you are using frozen berries you can blend them frozen, but I prefer to thaw the berries first to enjoy the juice of the berries more and not have such a cold breakfast. You can defrost berries in the microwave or in a pot on the stove with a bit of water, however, the vitamins in berries are heat sensitive and can denature when too much heat is applied. To defrost the berries while retaining the most nutrition, defrost them slowly in a bowl in the fridge or at room temperature (takes several hours or overnight). Or, my preferred method for a quick breakfast, put the berries in a bowl, and put the bowl in a warm water bath (i.e. no hot water directly on the berries). In 10 minutes, your berries will be safely defrosted.
  • Blending chia seeds: You don’t have to blend the chia seeds for this breakfast. If you prefer the texture of them whole, toss the chia seeds in after blending the fruit. However, blending the chia seeds is reported to make their nutrients more available, so it is recommended.
  • Sweetener: One tablespoon of maple syrup combined with one cup of berries and one cup of unsweetened yogurt makes for a somewhat tart yogurt bowl. However, adding half a banana sliced on top adds a fair bit of natural sugar, and is sufficient for me to feel like I’m eating a sweet (enough) treat. Alternatively, you can add more sweetener to taste—but this may impact blood sugar levels and satiety later in the morning.
  • Meal prep friendly: Make a double batch and enjoy breakfast ready-to-go for the next few days. Store left overs in a sealed glass jar in the fridge and stir well before eating.
  • Customize: Swap out the granola for toasted nuts, or try coconut flakes and cacao nibs for crunch and flavor. Try adding different superfoods and let us know how it goes!

Description

Start your day with berries, yogurt, and chia seeds. It’s is a delicious and healthy breakfast to enjoy all year long, with fresh or frozen berries, and a sprinkling of superfoods. Frozen berries are blended with yogurt and chia seeds and refrigerated until thickened into a pudding. Top with banana, granola, and nut butter for a no-fuss breakfast.


Ingredients

  • 1 cup mixed berries (fresh or frozen, frozen berries are best defrosted)
  • 3 tbsp chia seeds
  • 3 tbsp grated beetroot
  • 1 cup unsweetened Greek yogurt
  • 1 tbsp maple syrup (or honey)
  • 1/4 tsp turmeric
  • 1/2 tsp maca powder
  • 1 tsp black sesame seeds

Instructions

Blend the Base

  • Combine berries, chia seeds, beetroot, yogurt, maple syrup, turmeric, and maca in a bowl. 
  • Blend ingredients with a stick blender. (Alternatively,  ingredients can be blended in a conventional blender). Blend under smooth, or leave some texture – it’s up to you.

Chill

  • Refrigerate for at least 20 minutes, or overnight, until the mixture thickens into a pudding-like consistency.

Add Toppings and Enjoy

  • Give the blended mixture a stir, scoop it into a bowl, and top with sesame seeds. You can also add banana slices, granola, nuts, or a spoonful of your favorite nut butter. Enjoy immediately.
