Description

The perfect homemade energy bar – Chocolate Coconut Energy Bites strike the perfect balance of indulgence and nourishment. Flavourful shredded coconut combines with the smooth richness of dark chocolate. Each bite is molded and chilled, or shaped by hand if you prefer, then dipped with your favourite dark chocolate. The result is a satisfying, energizing snack—soft, chewy coconut centers wrapped in bittersweet chocolate for the win! Each bite delivers energy in its purest form, giving you the endurance you need.


Ingredients

Coconut Filling

  • 1 tbsp coconut oil
  • 2 cups unsweetened shredded coconut
  • 1/4 cup full-fat coconut milk or coconut cream
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • A pinch of salt

Chocolate Coating

  • 200g (7 oz) dark chocolate (70% cocoa or more)
  • 1 tsp coconut oil

Instructions

Mix the Coconut Filling

  • In a small pan, melt the coconut oil over medium-low heat. (If you have liquid coconut oil you can skip this step.)
  • Transfer the oil to a medium size bowl. (A rubber spatula is helpful here for getting every drop out of the pan.)
  • In the bowl, add the shredded coconut, coconut milk, maple syrup, vanilla extract, and salt to the melted coconut oil.
  • Mix well. The mixture should stick together when pressed. If it’s too dry and won’t form a ball or bar when pressed, add 1 more tbsp of coconut milk.

Shape the Bars

  • Scoop the mixture out of the bowl with a small spoon and press into a silicone mold. (In the photos shown here I used a mold that forms small, square, bite-sized pieces, but you could also use a bar-shaped mold. If you do not have a mold, you can shape the mixture by hand into small bars 5 cm (2 inches) long).
  • Place the mold into the freezer for 30-40 minutes, or until the mixture is firm. If you hand-shaped the mixture into bars, place them on a parchment-lined tray and freeze.

Melt the Chocolate

  • In a glass or stainless steel bowl, melt the dark chocolate and coconut oil using a double boiler. If you don’t have a double boiler, placing your glass or stainless steel bowl over a pot of gently simmering water also works. (Always be cautious of escaping steam.) Alternatively, you can microwave the chocolate and oil in 30-second bursts, stirring in between, until melted.

Coat the Bars

  • Remove the coconut squares from their mold, if using.
  • Using a fork or spoon, dip each chilled coconut square into the melted chocolate, ensuring it is fully coated.
  • Let the excess chocolate drip off, then place the coated bars on a parchment covered tray.

Chill

  • Refrigerate for 10 to 20 minutes, until the chocolate is set.
